A Weekend Away
Due to the nature of my job, my husband, 3-year-old and I often find ourselves away from home for the weekend eating dining hall food and sleeping in hotel rooms. This never presented a problem until we went Gluten, Sugar, Dairy and Everything-Processed Free! This weekend we were away from home for Saturday Dinner, Sunday all day, and Monday Breakfast, and although I proposed a 3-day fast, neither of us were buying it. So I had to do a little extra prep work to keep us Whole30 friendly for the trip. 

Snacks
We have been trying really hard to steer clear of snacks this month, as eating whole foods 3 times a day has left us full in between meal times. But  this weekend our schedule was much different than normal, keeping us up until 1am or later. I wanted to make sure when everyone else was eating pizza and chips at 10pm, we would have an alternative. So I pulled together some quick-to-grab snacks in baggies to get us through the weekend. The most common was carrot sticks or raisins with cashews, but we also had some fresh apple slices, dehydrated veggie chips and chicken slices to fill in the holes. 

Breakfast
This was the best discovery ever! I found a recipe for 'egg muffins', scrambled eggs with the desired 'toppings' (sausage, veggies, etc) baked in muffin tins and refrigerated or frozen. These heated up well and tasted delicious! Check out the whole recipe on my Pinterest board!

Lunches
This was a tough one. I had intended on utilizing the Dining hall's salad bar and then adding protein with hard boiled eggs and chicken, but this turned out to be more difficult than I had planned. The first day we ate leftovers and pieced together a meal, but the second day we decided to give the restaurant scene a shot and we headed out to Cracker Barrel for our first family Whole30 dining out experience. Our poor waitress was most likely not expecting customers like us, as I warned her right off the bat that we are gluten, dairy, and sugar free! But she worked with us and was so patient, helping us find just the right things on the menu and double-checking with the kitchen to ensure that there were no secret sauces or marinades. We ordered peppercorn steak, sweet potatoes and broccoli, and it was delicious! The temptation to order the steaming hot rolls was definitely there, but we stood strong and it were both surprised at how easy it was.

Knowing that we had a big weekend of pre-made food ahead, earlier on in the week I had made a big batch of homemade tomato sauce with everything in it from zucchini to summer squash. It was delicious alone, but on top of cauliflower and chicken it was very satisfying. I had also made a large chicken cashew stir fry with every veggie imaginable! Add all that to some leftover hamburger beef and as always, our trusty bag of snacks, and we were good to go!

Overall this weekend was a huge success. It wasn't easy, but with everything pre-made ahead of time it was just a matter of popping it in the microwave and steering clear of the variety of other foods being served... or the 32 pizzas I had to transport in my trunk at 11:00pm....!

I would recommend this to anyone - you can absolutely do this! Nothing is too hard if you put your mind to it!
